We cut the washed and cleaned liver into portions and pour boiling water for 2-3 minutes. Any liver can be used. If you pour boiling water over the product, the unpleasant odor will disappear, and the texture will be soft.

Boil water in a saucepan and add bay leaf, a few black peppercorns, and other spices to taste.

After boiling, a large piece will be cooked in 40-45 minutes. Small - in 15-20 minutes.

  • Soak in cold water or milk and change the liquid several times;
  • Leave the liver in a solution of vinegar, salt and sugar overnight;
  • Soak the liver for 15 minutes in a solution of manganese, and then 30 minutes in milk.
