Aioli is a delicious garlic sauce that is superior to mayonnaise in many ways. In this article, you will learn how to cook aioli at home.

What is aioli sauce

Traditional aioli sauce is made with just two ingredients: olive oil and garlic.

This is a popular sauce that was originally made only in the Mediterranean countries, southern France and eastern Spain.

Sometimes mayonnaise and aioli are used interchangeably; however, this is not correct.

Despite the similarities, there is a significant difference: mayonnaise is emulsified from egg yolks with butter, while aioli is emulsified from fresh garlic and olive oil.

However, today aioli is also prepared with the addition of egg yolks.

How to cook aioli at home

To whip the sauce, you will need a mortar and pestle or a food processor.

What you need

  • Fresh refined olive, rapeseed or sunflower oil;
  • Fresh chicken eggs;
  • Raw young minced garlic;
  • Classic or Dijon mustard;
  • Lemon juice or vinegar.

How to cook

As a result of cooking, you will get 3/4 cup of sauce:

  1. Add salt to minced garlic.
  2. Mix into garlic paste with 1 large egg yolk and ½ teaspoon mustard.
  3. Whisk in ½ cup oil in a small stream while churning.
  4. When the mass thickens, add salt, pepper, lemon juice to the finished sauce.

Aioli sauce is served with white fish, meat, grilled vegetables, and potatoes.
