Summer Dessert Recipe: Lemon Granita

What is granita

It is an Italian frozen dessert made from water, syrup and fruit.

The consistency of granite is similar to snow and ice.

The taste of granite can be anything. However, the most refreshing is citrus.

How to cook

To prepare lemon granita, you need to take lemon juice, syrup, water, sugar and fresh mint.

Follow the steps:

  1. Peel the lemon zest with a vegetable peeler and set aside for garnish and syrup.
  2. Squeeze the lemon juice by hand or with a juicer. You should have a cup of lemon juice.
  3. Start making syrup. Take 3 cups of water, 1 cup of sugar and lemon zest.
  4. Add to saucepan and simmer until sugar melts and mixture boils. It will take no more than 5 minutes.
  5. After boiling, remove the pan from the stove and leave the syrup to cool for 15 minutes.
  6. Strain the finished syrup through a fine sieve, add lemon juice to it and beat with a blender.
  7. Pour the prepared mixture into a baking dish and freeze for at least 45 minutes.
  8. Remove the granite and beat it into fine ice with a fork or whisk, repeating the process every 20 minutes.

The texture of the dessert will resemble frozen sherbet or lemonade.

Serve lemon granita in a glass, garnished with zest and fresh mint.
