In winter, people often want tasty and comforting meals to stay warm and healthy, and soup is an amazing option!
The best thing about soups is that even vegetable soups can be extremely fulfilling and nutritious.
Here is how you can cook a healthy and delicious soup.
Prepare Veggies
Peel and chop the carrots into bite-sized pieces. Dice the potatoes into small cubes.
If using frozen peas, thaw them. If using fresh, set them aside.
Saute Veggies
Heat olive oil in a large pot over medium heat.
Add diced onion and minced garlic. Saute until they are translucent and aromatic.
Add Chopped Veggies
Add carrots, potatoes, celery, and peas to the pot. Stir well to coat the veggies with the sauteed onion and garlic.
Pour Broth/Water
Pour in vegetable broth or water, ensuring it covers the vegetables.
Adjust the quantity based on your desired soup thickness.
Seasoning
Season with salt, pepper, thyme, and rosemary. Stir to combine the flavors.
Simmer
Bring the soup to a boil, then reduce the heat to simmer.
Let it cook uncovered for about 30-40 minutes until the vegetables are tender.
Thickening Option
If you prefer a thicker soup, mix 2 tablespoons of flour or cornstarch with a bit of water to create a paste.
Stir this into the soup and let it simmer for an additional 10-15 minutes.
Blending (Optional)
For a smoother texture, use an immersion blender or transfer a portion of the soup to a blender.
Blend until smooth and return it to the pot.
Adjust Seasoning
Taste the soup and adjust the seasoning. Add more salt, pepper, or herbs if needed.
Serve
Ladle the thick vegetable soup into bowls. Optionally, garnish with fresh herbs or a drizzle of olive oil.
